The October 2008 issue of Everyday Food magazine is always one I go back to in fall. Having tried at least half of the recipes, they are all great. One in particular which is nice is the Spicy Coconut Chicken Casserole.
I really enjoy the combination of green beans and red peppers but made a few other substitutions. First off I used boneless skinless chicken thighs in place of chicken legs. I also used light coconut milk because I'm not a fan of heavy food in something like this. I also added a bit of lime juice and (or) fish sauce close to the end. We all really enjoyed this, and believe it or not, the Thai red curry wasn't too spicy for Owen (he's sensitive to spicy flavours). I think we'd definitely make it again.
