This is a very simple recipe, just basically an assembly of ingredients. It's a great way to use up leftover pork tenderloin. My favourite part of this salad is the cubes of pepper jack cheese. I probably won't end up making this again because Everyday Food had a killer recipe for a Chef's Salad with Turkey, Avocado and Jack Cheese which I much prefer to eat and recommend highly.
