Do you ever have those days where nothing will do unless you're eating a plate full of creamy pasta? Well, I do and in desperation I made a dinner from, again, the November issue of Everyday Food magazine.
The recipe is for Creamy Shiitake Pasta but I really took a lot of liberties on this one. Instead of shiitakes I used crimini mushrooms (just as delicious, on sale last week and came pre-sliced). For the first time ever we didn't have fusilli in the house, but had 4 bags of penne, so Crimini Penne it was! Garlic, shallots, cream and white wine and only a few minutes until this delicious late Saturday night dinner was all but gone. It is so, so good!
