bbq chicken thighs with pineapple-cucumber salad

Another recipe we decided from the Everyday Food May 2013 issue was the cover shot of Chicken with Pineapple-Cucumber Salad.
 
The chicken was bbq’d with a simple spice blend of lime zest and chili powder. Then the salad was pineapple, cucumber, lime juice & cilantro. Our evening was so warm and sunny this is a perfect summer style dinner. It smelled fantastic as the chicken was bbqing and the side salad was cool and sweet. We all really loved this dinner and based on simplicity, this is a perfect busy weeknight go-to dinner option.
